Title: Tomato Arugula Salsa

1lbPlum tomatoes -- seeded and
  Chopped
1cArugula leaves -- chopped
1tbMinced red onion
1/2cExtra virgin olive oil
1tsDijon mustard
2tbWhite wine vinegar
2tbLemon juice
  Salt and pepper

You can use basil, italian parsley or watercress instead of the arugula.

Chop by hand and combine all ingredients.
